8 nosMedium small flower crabs
8 pcsCrab shells, cleaned and dried
2Egg white, for coating
SomeBreadcrumbs, for coating

200 gMinced chicken
1Egg
50 gCoconut milk
2 tbspCornflour
5 – 6 pcsKaffir leaves, finely shredded
1/2 tspAJI-NO-MOTO® Umami Seasoning
1 tspBlack pepper powder
1 tbspFish sauce

4 – 5 pcsShallots
2 pipsGarlic
3 – 4 slicesGinger
2 – 3 sprigsCoriander roots and leaves
Method

Method

  1. Steam crabs and flake off the meat.
  2. In a large bowl, mix together crabmeat, ingredients (A) and (B) to a gluey paste.
  3. Stuff the paste into the crab shells.
  4. Glaze the top with egg white and coat lightly with breadcrumbs.
  5. Heat oil and fry till golden brown with medium fire.
